One-Pot Healthier Tortellini Soup

This one-pot tortellini soup has been on heavy rotation in our house lately. It’s one of those recipes that feels comforting and indulgent, but still a little lighter than your typical creamy soup — which is always a win in my book.

I love using Italian chicken sausage instead of pork to keep things on the healthier side, and loading it up with spinach makes it feel hearty without being heavy.
